Xin Yang Mao Jian is one of the ten best known Chinese teas and originates from the mountainous region of Xin Yang in the Chinese province of Henan. The tea bushes here are located at a great height above sea level in almost complete isolation from civilisation, which creates excellent conditions for their growth and accumulation of a large quantity of active substances. The tea is sensitive to the temperature of the water, which in the first infusion should not exceed 70 to 75 degrees Celsius. The reward for this is a refreshing, sweetly floral and slightly spicy taste with a citrus flavour. The aroma of this tea is very atypical of green tea, distinctively spicy with fruit elements in the background. The leaves are small, slightly curled and in their appearance are reminiscent of coniferous plants. Ji Pin in the name signals that this is the highest available class of this green tea. Xin Yang Mao Jian has been known since the reign of the Tchang dynasty, and its processing requires great skill and knowledge of the original procedures.

Brewing guide
Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. Use approx. 2-3g of tea leaves (2 teaspoons) for each 150ml of infusion or to taste. Brew the necessary quantity of tea in hot water at a temperature of 70-75°C for a period of 1 minute for the first and second infusions. With further infusions progressively extend the brewing time.
