Chinese Oolong, considered the king amongst Tie Guan Yin teas. The name is derived from the clear greenstone colours of the tea nuggets and the infusion itself. The Greenstone Iron Goddess originates from the renowned mountain region of An Xi in the Fujian province, and ranks amongst the ten best known teas of China. This tea is harvested at the beginning of May and undergoes only very slight oxidation. The taste and aroma are distinctively floral with a subtle honey sub-tone, and the tea develops with further infusions. Greenstone Iron Goddess was available only in the emperors’ courts in the age of the rule of the Chinese emperors, and was usually served only on special occasions. In Chinese culture it has been the case since time immemorial that if you wish to declare your love for someone, you shall present that person with a gift decorated with greenstones or at least a gift of greenstone colour, and Bai Shui Guan Yin has always been considered as a gift of the most valuable.

Brewing guide
Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. Use approx. 3g of tea leaves (2 teaspoons) for each 150ml of infusion or to taste. Brew the necessary quantity of tea in hot water at a temperature of 85-90°C for a period of 3-5 minutes for the first and second infusions. With further infusions progressively extend the brewing time. For a full flavour it is necessary for the leaves to unfurl entirely.

Jak je málo oxidovaný tak mi připomíná taiwanský Gao Shan, ale přesto je trochu jiný, moc dobrý. Metodou Gong Fu mi dal 7 dobrých nálevů, ale kvůli ceně to čaj na každý den určitě nebude. I tak rozhodně doporučuji.
