Plumed Tips from Yellow Mountains BIO

| An ancient Chinese proverb says that great tea is born in great mountains. This is truly the case, and the highest mountain in eastern China, Huang Shan in the province of An Hui, is one of the most famous Chinese mountains, where the best known Chinese teas are cultivated at a height of 700-800m above sea level. Mao Feng tea was already celebrated 300 years ago. These “plumed tips from the Yellow mountains”, as the name can be translated, produce a limpid apricot yellow infusions with a distinctive florally sweet aroma and taste. It is said that the scent of magnolia, which is typical for this tea despite the fact that none grow in the Huang Shan region, is caused by the ever-present wild peaches. The leaves are small, flat with a slightly raised edge and covered with white down. The best quality Mao Feng is harvested exclusively in the period before the Qing Ming festival (beginning of April). |

| Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. Use approx. 2g of tea leaves (1-2 teaspoons) for each 150ml of infusion or to taste. Brew the necessary quantity of tea in hot water at a temperature of 75-85°C for a period of 1 minute for the first and second infusions. With further infusions progressively extend the brewing time. |
