Nan Yan is a mountainous area in the Chinese province of Fujian, from where this Tie Guan Yin originates, like the great majority of these Chinese teas of the Oolong variety. In comparison with other teas of this category it is somewhat more oxidised, the relatively large leaves are darker and produce a richly gold beverage with a distinctive taste and distinctive honey aroma. It is surprising how a few grains of tea can fill the cup with tea leaves after pouring on water.

Brewing guide
Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. Use approx. 3g of tea leaves (2 teaspoons) for each 150ml of infusion or to taste. Brew the necessary quantity of tea in hot water at a temperature of 85-90°C for a period of 3-5 minutes for the first and second infusions. With further infusions progressively extend the brewing time. For a full flavour it is necessary for the leaves to unfurl entirely.
