| Teh Kuan Yin is a top quality tea. The relatively high price of this tea makes it more suitable for special occasions than for everyday drinking. The very dark leaves of the tea indicate that the tea has undergone a higher degree of oxidation than is usual for example for Oolongs from Taiwan, and the word “iron” in the title Tie Guan Yin is derived from nothing other than the large, metallic black leaves of these Chinese Oolongs. The tea has undergone minimal roasting in order to preserve its fundamental qualities, and produces a golden infusion with a floral honey aroma and taste. The leaves bear several infusions, ideal for Gong Fu.
