It can be said that essentially all teas are seasonal. Luckily, thanks to the fact that the seasons alternate at different times of the year in different parts of the world, we can always enjoy the teas which are best in the given season all year round. “Pre-Rain” Dragon Well tea is harvested very early in the spring (similar to the first harvest of Darjeeling teas for example), when it is freshest and most delicate. To be specific the tea is harvested before the regular frosts in the season of the “Green Rains” (Gu Yu) from 19 – 21 April, when “even the tigress may freeze to death”, as old Chinese legend has it. The classic long, flat leaves which are typical of this tea produce a rich, green infusion with a distinctive bittersweet taste and aroma, which is sought after in quality green tea. This tea has a higher quantity of amino acids than is typical for other green teas, which amongst other factors is effective in combating everyday stress.

Brewing guide
Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. Use approx. 2g of tea leaves (1-2 teaspoons) for each 150ml of infusion or to taste. Brew the necessary quantity of tea in hot water at a temperature of 75-85°C for a period of 1 minute for the first and second infusions. With further infusions progressively extend the brewing time.

Pro celodenní pití. Málo kofeinu. Není moc nakopávající, alespoň na mě tak působil.

do kvality se pouštět nemohu, to neumim zhodnotit u žádného čaje. Možná časem, až získám zkušenosti. chutnají mi všechny. Spíš čaje piji podle nálady a věřím, že jsou kvalitní všechny. Možná je to o tom, které jsou pro mě chutnější a zajimavějším.
